Better Than 10hrs of Sleep Almond Flour Brownies

These are the best (hands down) "diet" or "healthy" brownies I have EVER encountered. They are absolutely amazing!


You will need:

2/3 cup sugar-free honey
1/2 cup melted butter or coconut oil (I used a little of both)
1 Tbsp. vanilla extract
3 eggs
1 cup almond flour
1/2 cup cocoa
1/4 tsp. baking soda (this can be omitted)
1/4 tsp. sea salt (omit if using salted butter)


Directions

Heat oven to 350 degrees F. Mix honey, butter, vanilla and eggs until smooth. (If omitting baking soda, beat eggs until foamy before adding in other wet ingredients.) Add almond flour, cocoa, baking soda and optional salt. Stir to blend. Pour into greased 8x8x2 inch pan. I greased with coconut oil (Yummmmy) . Bake for approximately 25 minutes, until center no longer jiggles and top feels cakey.

Cool on a wire rack at least until sides pull away from the edge of the pan before cutting.

Cauliflower Pizza Crust

While the cauliflower pizza slices CAN be held with your hands, they are on the floppy side, so a knife and a fork might prove helpful.

Serving size: 3 slices
Makes 2 servings

Ingredients
Olive oil cooking spray
1 small head cauliflower, trimmed and cut into florets
2 large eggs, lightly beaten
1/2 cup shredded part skim mozzarella (2oz)
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 teaspoon kosher salt
1/4 teaspoon black pepper

Directions
1. Heat oven to 400 degrees F. Line a baking sheet with parchment paper and lightly spray with olive oil spray.
2. Place the cauliflower in a food processor and rice it – pulse until its texture resembles rice. Work in batches if needed. You should get 2 heaping measuring cups of riced cauliflower, about 280 grams (10oz).
3. In a medium bowl, mix the riced cauliflower, eggs, mozzarella, oregano, garlic powder, salt and pepper.
4. Transfer the mixture to the center of the prepared baking sheet and use a spatula to press it into a thin 10-inch circle. Try to even it out so that it’s all the same thickness.
5. Keep watch, as oven times will vary. Mine burnt the first time. Bake until golden brown and very set (so that edges can be gently lifted up from the baking sheet without the circle falling apart), about 40 minutes. Remove the baking sheet from the oven. Add your favorite toppings and enjoy! VERY YUM and guilt free!!

No Carb/Sugar Free Chocolate Chip Banana Bread Cookies


For dessert, I made these awesome little buggars that I created by happenstance: No Carb/Sugar Free Chocolate Chip Banana Bread cookies. They were amazing Yields about 9 cookies.


Stock up on:

8 Tbsp Almond Flour
2 Tbsp mashed banana (I used organi...c baby food because it was handy)
1 Pinch Salt
1/8 tsp Baking Powder
3 Tbsp Almond milk (or milk of choice)
1/2 tsp Stevia
1/2 tsp Vanilla extract
1 Handfull of Sugar Free Chocolate Chips

Preheat to 350. In a small bowl, mix almond flour, baking powder, and salt. Add in mashed banana & stir. Add in almond milk, one tablespoon at a time until fully incorporated. Stir in chocolate chips. Drop dough by tablespoon or teaspoon, depending on how big you want them, on a parchment lined baking sheet. I used a silicone mat. Flatten the dough into cookie shapes. Bake in the oven for 10 minutes. Let cool before scarfing them all down.

Low Carb/Sugar Free Cream Cheese Pancakes & Turkey Bacon

Made a seriously delicious breakfast this Morning. Even my anti-diet Mom approved!! Zero carb/sugar free very easy Cream Cheese Pancakes & turkey bacon

Pancakes:
2 Servings

1 Tbsp coconut oil
2oz cream cheese
2 eggs
1 package Stevia

Heat coconut oil in nonstick skillet on med low heat. Blend ingredients in blender until smooth. Let bubbles settle for 2 minutes. Pour 1/4 batter in skillet. Flip after 2m. Makes 4 6inch pancakes. They taste like the best French toast you've ever had and are SO healthy!

Homemade & Healthy Popcorn Shrimp & Fauxtatoes

For my no carb, no sugar eating habits: This was what I made for dinner tonight:





Homemade popcorn shrimp

12 raw shrimp
4 Crushed melba toast
1 egg white

... Preheat oven to 450. Dip shrimp in egg white, then roll in melba crumbs. Line on cookie sheet for 10 minutes. This Saucey Momma couldn't resist the cocktail sauce. Maybe you can ;) YUM.

Fauxtatoes

2 cups chopped cauliflower
minced garlic
S/P
Chicken bouillon

Set oven to 400. Mix cauliflower, garlic, and salt/pepper in dish and cover with aluminum foil for 20 minutes. After cooking, place in blender and add bouillon for desired consistency. I added I Can't Believe It's Not Butter and a pinch of cheese. DELISH!
