For dessert, I made these awesome little buggars that I created by happenstance: No Carb/Sugar Free Chocolate Chip Banana Bread cookies. They were amazing Yields about 9 cookies.
Stock up on:
8 Tbsp Almond Flour
2 Tbsp mashed banana (I used organi...c baby food because it was handy)
1 Pinch Salt
1/8 tsp Baking Powder
3 Tbsp Almond milk (or milk of choice)
1/2 tsp Stevia
1/2 tsp Vanilla extract
1 Handfull of Sugar Free Chocolate Chips
Preheat to 350. In a small bowl, mix almond flour, baking powder, and salt. Add in mashed banana & stir. Add in almond milk, one tablespoon at a time until fully incorporated. Stir in chocolate chips. Drop dough by tablespoon or teaspoon, depending on how big you want them, on a parchment lined baking sheet. I used a silicone mat. Flatten the dough into cookie shapes. Bake in the oven for 10 minutes. Let cool before scarfing them all down.
